Sweet, sour, spicy and sharp are words that best describe this salad that requires minimal effort and delivers a bold taste. The inherently delicious flavors of the 4 primary ingredients are gently enhanced with lemon juice and Tajin; a spice blend my dear friend Saima introduced me to recently and one that I've been sprinkling on everything near and far ever since. A blend of Red Chillies, Sea Salt and Dehydrated Lime Juice, it is made with all natural ingredients; no artificial additives or preservatives whatsoever. Since it comes in a powder form, it adheres to the salad without the aid of any added fat that is typically required in salad dressings.
In addition to being low in fat, the assorted fruits and vegetables used provide tons of vitamins, minerals and antioxidants, making this a healthy lunch or snack option on a hot summer day. For all those unfamiliar with Micro-greens, they're young green vegetables, almost like a sprout, that have been researched as having 40 times the nutritional value of their mature counterparts. They add great flavor and amazing texture to your food as well as being a beautiful garnish. Hope you enjoy this Salad as much as I do!
- 6 mangoes
- 1 red bell pepper
- ½ purple onion
- 1 lemon
- ½-1 Tsp tajin
- ½ Cup broccoli wasabi microgreens
- Dice the mangoes, bell pepper and onion
- Add the lemon juice and tajin
- Stir well and top with the micro greens and serve
