Ingredients

  • 1 ½ lbs boneless chicken see notes
  • 1 ½ tsp garlic paste
  • 1 ½ tsp ginger paste
  • 2 tbsp extra virgin olive oil
  • 2 tbsp white vinegar
  • 2 lemons
  • ½ cup yogurt
  • ¼ cup mint
  • 6 serrano chillies see notes
  • 1 cup cilantro
  • 2 tsp salt
  • 2 tsp cumin powder
  • 2 tsp amchur powder

Instructions

  • Wash and trim the chicken and cut it into 2" cubes.
  • Mix all of the remaining ingredients in a blender to make the marinade.
  • Mix the chicken cubes with the marinade and put them in the fridge for an hour.
  • After an hour, place the meat on skewers and preheat your grill for 10 minutes at 450° F.
  • Brush the skewers with a little olive oil and grill for 10-15 minutes, turning as necessary, halfway through, for even cooking.
  • For perfect results, use a thermometer. For white meat, an internal temperature of 165° indicates the chicken is cooked through (see notes).

Notes

Boneless Chicken - I prefer to use chicken tenderloins but boneless thighs can also be used. If you use thighs, cook the meat a bit longer, to an internal temperature of 180 degrees as brown meat takes longer to cook. Make sure to try and cut the meat into 2-inch square pieces. The more even the size of the pieces, the easier and more even the cooking process.
Serrano Chilies - I use serrano chilies in most of my Pakistani cooking. If you want your chicken less spicy, you can use half the quantity and deseed them, or use jalapenos instead. On the other hand, if you are used to spicy food I would add a few more peppers than the recommended amount.
