- 2 cups cauliflower florets
- 2 tbsps salted butter
- ¼ cup water
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup shredded cheddar cheese
- ¼ cup herbs of choice
Add the water and cauliflower to a saucepan, seal tightly with foil, cover and turn the flame on high and cook for 10 minutes.
Uncover the saucepan and dry any residual water and then turn the stove off.
Add the butter, salt and pepper and mash slightly, leaving some lumps (adjust the seasoning if necessary)
Sprinkle the cheese on top and cover the saucepan. Leave for 3-5 minutes so the cheese can melt.
Stir slightly for the cheese to mix with the cauliflower and place in serving dish.
Garnish with herbs. Chives are a good option, but parsley and dill also work well. I sometimes opt for microgreens instead of traditional herbs. Feel free to experiment till you find what you like best.
