Cauliflower has been a popular low carb, keto option for quite a while. I've been a little slow to jump on the bandwagon but am beginning to develop quite a taste for it! Cauliflower Pizza crust was my first conversion and I actually prefer it to the real thing now!
Cauliflower's mild taste and smooth texture makes it a perfect substitute for potatoes, rice and many other carbs per www.thedailymeal.com. It tastes wonderful raw, roasted, boiled, steamed or air fried. Being high in fiber, Vitamin C and folate makes it a favorite option for those on various diets.
Gluten free diets, paleo diets, celiac disease diets, along with low carb and keto diets all incorporate many cauliflower recipes. Since the vegetable itself has a very mild taste it's easy to add seasoning and other ingredients to create amazing culinary delights.
Recipe Mix Ins
Take this particular recipe, one can add in a combination of different cheeses for more flavor. Provolone and mozzarella, in addition to the cheddar come to mind. The mashed, cheesy cauliflower can be twice baked in the oven with a topping of breadcrumbs for a crispy topping.
Add a touch of paprika to the breadcrumbs and it will add a nice kick to the cauliflower. Some sour cream can make the mash a little bit lighter and fluffier and add a tangy taste.
As far as serving options are concerned, I'm definitely adding this to my Fourth of July Menu this year. Since the grilled tandoori lamb chops I usually make are so caloric I try to go with lighter sides to balance out my calorie intake for the day. Easy Cheesy Mashed Cauliflower

Ingredients
- 2 cups cauliflower florets
- 2 tbsps salted butter
- ¼ cup water
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup shredded cheddar cheese
- ¼ cup herbs of choice
Instructions
- Add the water and cauliflower to a saucepan, seal tightly with foil, cover and turn the flame on high and cook for 10 minutes.
- Uncover the saucepan and dry any residual water and then turn the stove off.
- Add the butter, salt and pepper and mash slightly, leaving some lumps (adjust the seasoning if necessary)
- Sprinkle the cheese on top and cover the saucepan. Leave for 3-5 minutes so the cheese can melt.
- Stir slightly for the cheese to mix with the cauliflower and place in serving dish.
- Garnish with herbs. Chives are a good option, but parsley and dill also work well. I sometimes opt for microgreens instead of traditional herbs. Feel free to experiment till you find what you like best.
