Fresh & Easy Citrus Avocado Salad

Ingredients

  • 4 navel oranges
  • 2 cups grapefruit segments (SEE NOTES)
  • ½ red onion
  • 2 avocados
  • 1 cup microgreens
  • 1 tsp tajin (SEE NOTES)

Instructions

  • Peel and slice the navel oranges into segments
  • Measure 2 cups of pre bottled grapefruit segments or peel and slice fresh grapefruit (SEE NOTES)
  • Toss all the citrus fruit together in a bowl and set aside in a fridge for about 30 minutes (SEE NOTES)
  • Slice the red onions into thin crescent shaped slivers
  • Slice the avocados
  • After the 30 minute period, mix the citrus along with its juice, onion and avocado. Sprinkle with Tajin and microgreens and enjoy (SEE NOTES)

Notes

Grapefruit - Whereas fresh grapefruit is obviously the best choice here I personally take a shortcut and use store bought bottled grapefruit segments. I do make sure to look for the variety that's bottled in it's own natural juice or uses Monk Fruit Sweetener (which is my personal sweetener of choice). This keeps the salad healthier and lower in sugar.
Tajin - I've put down 1 tsp of Tajin as an approximate amount but this is based on personal preference. This and the citrus juice is the only real seasoning/dressing in this salad so add more if you find it necessary.
Resting Time For Citrus - The resting time allows for the citrus to release it's juice. This is what acts as the dressing in this salad. The acid in the juice prevents the avocado from browning and mixed with the Tajin acts as a light dressing without the extra calories of an added oil based vinaigrette.
Dressing - Although I find the salad light and refreshing as it is, if you prefer a little dressing on it, feel free to create one. You can use a mix of olive oil, honey and balsamic vinegar to create a light homemade vinaigrette or just drizzle a combination of infused olive oil and vinegar to give the salad a little more depth of flavor.
