This Fresh & Easy Citrus Avocado Salad is the winter equivalent of my summer grilled-peach-blueberry-salad. Light, refreshing and healthy it's the perfect main, side or appetizer while citrus fruit is in season. You can use anything from Cara Cara oranges to Blood Oranges, Clementines, Navel Oranges and so on.
According to leafyplace.com there are over 100 varieties of citrus fruits to pick from. That makes for many variations of this delightful and easy salad!
The recipe
This seasonal citrus avocado salad is beyond simple and truly defines clean eating. Fresh, delicious, ingredients tossed together marinate in their own juices. Topped with a light sprinkle of Tajin which adds a little needed piquancy and a garnish of microgreens, the dish is beautiful in it's natural splendor.
The avocado adds some needed bulk but if you still find the salad too light for your taste buds here are a few options to add more substance to it.
Add Ins
Although this salad is intended to be light and fruity you may want to eat it as a main course. Here are a few suggestions for some additional add ins to bulk it up more so it's more filling.
Citrus Additions
To begin with, there is such a large variety of citrus, you can play around with the type of citrus you're using. Both for the sake of taste and presentation, an array of colors and flavors will definitely be a welcome addition. A simple addition of Cara Cara or Blood Red oranges, for example, can turn this into a complete show stopper.

Pomegranate
A sprinkling of pomegranate seeds will also add some fun color and a nice textural addition to the salad.
Nuts
Similarly, a sprinkling of nuts, plain or roasted, would work really well. Pistachios, walnuts or pecans come to mind as great pairings with these particular ingredients. Living in the South, some seasonal sugared and spiced pecans come to mind as an amazing addition bot in terms of taste and texture.
Cheese
If you want to add a bit of protein, a sprinkle of feta or goat cheese would also be great to make this a more filling salad.
Greens
Last of all, I like to stick to a sprinkling of microgreens but this salad can easily be presented on a bed of Arugula or Spring Mix instead if you want to get your leafy greens in. I would however recommend a light vinaigrette for those greens if you choose to use them as they may need the additional flavor.
