Ingredients
1cuppitted medjool dates
2cupshot water
1zested lime
1teaspoonlime juice
¼cupsugar
⅛teaspoonsalt
1cupheavy whipping cream
2tablespoonpowdered sugar
¼cupchopped salted pistachios
2tablespoondried rose petals
Instructions
Slice open the dates and remove and discard the pits.
Soak these dates in 2 cups of boiled water for 1 hour.
Zest and juice the lime and set it aside for later.
Whip the cream with the powdered sugar and set it in the fridge.
Chop the pistachios and save them to use as a garnish.
After soaking, boil the dates in the water they've been soaking in on high heat.
Add the sugar, lime zest and lime juice and continue to cook the dates.
Cook for around 15 minutes, till all the water has evaporated and you have a dense mixture.
Chill completely before assembling the dessert in small glasses.

Soaking the dates - This step helps shorten the cooking time. Soak the dates in hot water for 1 hour or room-temperature water overnight.The lime - Lime zest and juice are vital in our dessert. They help balance the sweetness, act as a preservative, and release pectin, ensuring a perfect texture every time.Sugar - The dates are sweet, but a little sugar, like the lime juice, helps preserve and thicken the mixture.Whipped cream - The cream must be light, airy, and silky. The powdered sugar adds a hint of sweetness and structure to the cream. The taste and texture pair perfectly with the cooked dates.Salted pistachios - I always use salted pistachios to create a perfectly balanced flavor profile.Rose petals - These are added for a pop of color and are optional. Feel free to omit them if you wish.
