Second step - While the dates are soaking, zest, juice the lime, and set aside.

Fourth step- After the one-hour soaking period, add the dates, the water they've been soaking in, the sugar, lime zest, and juice, and bring to a boil.
Cook the dates until the mixture thickens, then cool to room temperature. Chill the mixture in the fridge for a few hours before assembling the dessert.

Ingredients
- 1 cup pitted medjool dates
- 2 cups hot water
- 1 zested lime
- 1 tsp lime juice
- ยผ cup sugar
- โ tsp salt
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- ยผ cup chopped salted pistachios
- 2 tbsp dried rose petals
Instructions
- Slice open the dates and remove and discard the pits.
- Soak these dates in 2 cups of boiled water for 1 hour.
- Zest and juice the lime and set it aside for later.
- Whip the cream with the powdered sugar and set it in the fridge.
- Chop the pistachios and save them to use as a garnish.
- After soaking, boil the dates in the water they've been soaking in on high heat.
- Add the sugar, lime zest and lime juice and continue to cook the dates.
- Cook for around 15 minutes, till all the water has evaporated and you have a dense mixture.
- Chill completely before assembling the dessert in small glasses.
